The problem with creamed corn is the cream. (We’re starting to sound like Chris.) As our education director Rosie Gill points out, summer corn is fleeting! You’re only going to get that fresh grassy flavor for a month or so out of the year, so there’s no reason to mute the flavors with heavy cream.
